Try a Culotte!

Did you ever hear of a culotte steak? Us neither before embarking on our FBW journey. The culotte, is cut from the cap of the top sirloin at a right angle to the grain or direction of the muscle fibers to ensure maximum tenderness. Its name is likely derived from the French word “Cul” which means backside or bottom. With plenty of marbling this is a juicy and savory boneless steak. Thick slices are great to use for searing, grilling or a spectacular roast. This easy to prepare cut gives a full sirloin experience at a lower cost to our clients.
